維生素B6(Vitamin B6)又稱(chēng)吡哆素,其包括吡哆醇、吡哆醛及吡哆胺,在體內(nèi)以磷酸酯的形式存在,是一種水溶性維生素,遇光或堿易破壞,不耐高溫。1936年定名為維生素B6。維生素B6為無(wú)色晶體,易溶于水及乙醇,在酸液中穩(wěn)定,在堿液中易破壞,吡哆醇耐熱,吡哆醛和吡哆胺不耐高溫。
維生素B6的基本結(jié)構(gòu)是2-甲基-3-羥基-5-羥甲基吡啶包括三種形式: 吡哆醇(PN)、吡哆醛(PL)和吡哆胺(PM),均具有維生素B6的生物活性,這三種形式在體內(nèi)可以相互轉(zhuǎn)變,動(dòng)物組織內(nèi)多以吡哆醛及吡哆胺存在,植物中則以吡哆醇為多。維生素B6易溶于水,對(duì)酸相當(dāng)穩(wěn)定,在堿性溶液中易破壞,在中性溶液中易被光破壞,對(duì)氧較穩(wěn)定。吡哆醛和吡哆胺較不耐熱,吡哆 醇耐熱,在食品加工、儲(chǔ)存過(guò)程中穩(wěn)定性好。
植物中的維生素以吡哆醇形式存在,動(dòng)物產(chǎn)品含有吡哆胺和吡哆醛。吡哆醇及其衍生物廣泛分布于酵母、谷類(lèi)、肝臟和乳中。

Pyridoxylamine (PM), a member of the B 6 vitamer family, is a potent scavenger of reactive carbonyls, inhibiting the late stages of glycation reactions that lead to AGE formation.
Pyridoxylamine limits the formation of CML and CEL and cross-linking in skin collagen and, ultimately inhibits the development of nephropathy in STZ-diabetic rats. Pyridoxylamine does not appear to function as an antioxidant since it does not prevent lipid peroxidation reactions. At the same time, it does prevent protein modification by products of lipid peroxidation, including inhibiting formation of malondialdehyde and 4-hydroxynonenal adducts on protein in Zucker rats in vivo.
