用途：白色結(jié)晶性粉末或無色晶體（以淀粉或大米為原料），或呈棕黃色（以糖蜜為原料）；易溶于沸水，微溶于冷水，尤其不溶于醋酸。其一鈉鹽——谷氨酸鈉用作調(diào)味品，商品有味精和味素等。代鹽劑、營氧增補(bǔ)劑、鮮味劑（主要用于肉類、湯類和家禽等）。亦可用作蝦、蟹等水產(chǎn)罐頭中，用量為0.3%~1.6%。如用于方便食品的肉湯和湯類，10g/kg 。用于飲料、焙烤制品、肉、肉香腸、肉湯、乳及乳制品、調(diào)味料、谷類制品，均400mg/kg。作為營養(yǎng)增補(bǔ)劑，限量12.4%。
