(二)胡蘿卜素的含氧衍生物類,即葉黃素類(xanthophylls)。葉黃素類在藻類色素中為數(shù)最多,其母體 與胡蘿卜相似。但其為含氧胡蘿卜素,即在分子兩端的環(huán)中有不同數(shù)目的氧原子,是胡蘿卜素氧化 的衍生物。
常見的葉黃素類有辣椒紅素、玉米黃素、葉黃素等,能溶于甲醇、乙醇和石油醚。
