Cellobiose is a disaccharide, a reducing sugar, consists of two β-glucose molecules linked by a β(1→4) bond. It can be hydrolyzed to glucose enzymatically or with acid.Oral cellobiose (cellobiose) can improve the clinical and pathological features of colitis and reduce the expression of mucosal pro-inflammatory cytokine mRNA. In rats, dietary fiber is extensively digested by β-galactosidase in the small intestine.
