Span is a synthetic non-ionic emulsifier, which is prepared by partial esterification of sorbitol or sorbitan with food grade palmitic acid. It is a pale cream-yellow to brownish-yellow bead, flake or hard waxy granule with a soft oily smell and caramel sweetness. Span-85 is not a single compound, but a mixture of various similar compositions, with sorbitol as the main body. It has low viscosity and the smallest HLB value, so it has the strongest lipophilicity. It is an excellent water-in-oil (w/O) emulsifier and an O/w type auxiliary emulsifier.
