Rosemary extracts can be divided into oil-soluble (antioxidant) and water-soluble (antioxidant and preservative), the former mainly carnosic acid, the latter mainly rosmarinol. Carnosic acid is a white or yellowish-white powder, soluble in oil and organic solvents such as ethanol, ethyl acetate, acetone and chloroform, insoluble in water. Carnosic acid is suitable for antioxidant of oil-soluble components. Used in sauces, pet food and feed, it has antioxidant and anti-aging effects.
