Alpha-galactosidase is a glycoside hydrolase that catalyzes the hydrolysis of A-galactoside bond. It can hydrolyze non-reducing D-galactosidase residues bound by A-1,6 bond, hydrolyze oligosaccharides such as honeys, raffinose, hydrothreosaccharides and verminose, and hydrolyze polysaccharides containing A-galactosidine bond. Such as galactomannan, locust bean gum, guar bean gum and so on.
